I made a promise to myself that when I got married, I would ensure my family didn't eat any pre-made, pre-packaged, frozen foods. I wanted to make everything from scratch, even simple recipes like pancakes - I wanted to put in that extra love in making breakfast staples. Who says you can only eat pancakes at breakfast? With this simple recipe, you'll never purchase another pre-made box of pancake mix again!





  • 2 cups all-purpose flour

  • 1/4 cup granulated sugar

  • 4 tsp baking powder

  • 1/2 tsp salt



  • 1 1/2 cup milk

  • 2 tsp vanilla extract

  • 1/4 cup butter, melted

  • 1 large egg


  1. Mix in all ingredients into a large bowl - I usually start with all the dry ingredients first, then add in the wet.
    *Hand mixed is perfectly adequate, no need to bring out the electric hand mixer.

  2. On a griddle or hot pan, butter up that surface!

  3. Using a 1/4 cup, scoop batter onto hot griddle.
    *You can use a ladle or large spoon, whatever you have on hand.

  4. Start from the centre and swirl outwards to make a circle.
    *Though, feel free to create any shapes you want! At first, my shapes were just dilapidated circles.

  5. Serve with syrup, berries, whipped cream, etc.
    *Better yet, smear some peanut butter and drizzle some condensed milk! You'll thank me forever!
