MINI BASQUE CHEESECAKE

These are mini for a reason! Each bite is so decadent, you can never just have one. You won't feel as guilty have two (or three) since they practically equal one slice...right? It's also the easiest recipe to follow with very few ingredients.

​INGREDIENTS

 

Dry

  • 3/4 cup cream cheese

  • 1/3 cup icing sugar (or caster sugar)

  • 1 tbsp all-purpose flour

  • 1/4 tsp salt

 

Wet

  • 1/4 cup heavy whipping cream

  • 1/2 tsp vanilla essence

  • 1 large egg

INSTRUCTIONS

  1. Preheat oven at 425°F + line a muffin tray with parchment paper in each slot.
    *Over line the muffin tray; prevents batter spillage + makes for easy cleanup!
     

  2. Mix in cream cheese with icing sugar.
    *I suggest softening the cream cheese for easy mixing.
     

  3. Add in egg, vanilla essence + salt; mix well.
     

  4. Add in heavy whipping cream. 
    *You'll notice the batter looking more liquid-y.
     

  5. Add in flour; mix well.
    *Don't worry if you see lumps!
     

  6. Pour in batter, filling 3/4 of each muffin tin.
     

  7. Bake for 25-30 minutes, depending how hot your oven is.
    *Also, on how burnt-looking you want the exterior to be.
     

  8. Place on a cooling rack. Try not to eat them right away!
    They're extra yummy once they've been refrigerated!
