One of the easiest recipes, which also happens to be super delicious! My brother-in-law, Craig, actually made this same recipe but made it with cornish hen for Christmas dinner. Since I didn't have that on hand, I substituted it for chicken thighs, bone-in and skin-on. It still turned out just as yummy! Let the chicken marinade for 30 minutes or overnight - It uses all the staples you already have in your kitchen.



  • chicken thighs or cornish hen

  • 1/3 cup soy sauce

  • 1/4 cup olive oil

  • 3 cloves of garlic (minced, sliced or coarsely chopped)

  • 2 tsp ground ginger (fresh is also an option, just grate some)

  • 1 tbsp brown sugar

  • 3 tbsp lime juice (fresh is best, bottled is fine)

  • toasted sesame seeds (however much you wish)


  1. Preheat oven to 350F.

  2. Mix all ingredients into a bowl - mix well. 
    *I usually get Gavin to taste-test to see if it needs more/less of a particular ingredient.

  3. In a cast iron pan, snuggle each chicken evenly around. Pour marinade all over.
    *You can also use a dutch oven or a baking tray that can catch the marinade. Don't waste it - it's gold!

  4. After your hour wait is over, your house will smell scrumptious and your chicken ready to eat!
    *Make sure the internal temperature is at 165F, we don't want to get salmonella.

  5. Pair with garlic fried rice and choice of veggies.
    *Veggies are optional, obviess.
